Man this week flew by quickly. A side note to all the presidential nominees - if someone makes an official 4 day work week part of their platform, I will vote for them.
I got into the habit this week of going to the gym after work, which I really love. The enormous mid town Crunch is very different from the tiny Brooklyn one. They have a much more functional sauna, which I treat myself to after every work out. It’s pretty much the best thing in the world.
I did try my maple roasted brussel sprouts again, but this time I nixed the kale, only because it was to complicated at whatever super late, post gym hour I was getting home at. My recipe looked something like:
2 cups brussels sprouts
2 tablespoons olive oil
3 tablespoons maple syrup
3 tablespoons balsamic
salt & pepper
This time they tasted way better, but were way sweeter then I want them to be. Meanwhile, while the brussels cooked, I made a brown rice salad inspired by something I saw my former roommate, M, make once. I was just some cooked brown rice thrown in with some chopped up veggies and parsley. Tasty enough, plus it lasted for days.
