I was in a baking mood this weekend and wanted to find a good dessert that was both sweetened by dates and without butter. I adopted this recipe from deliciousinspiration and these were pretty tasty, but also hard by the next day. I think my dough was laid out to thick. Also, I hadn’t worked with dates much before and I underestimated their level of sweetness. I think this recipe could have done with less sugar.
2 cup all purpose flour
1/2 teaspoon salt
2 teaspoon baking powder
4 eggs
2 cup light brown sugar
2 cups sliced almonds
2 cups chopped dates
- Preheat oven to 400F and line a baking dish with foil, grease.
- Mix together flour, salt and baking soda
- In a larger bowl, whisk the eggs. Then add the brown sugar and mix well.
- Add the flour mixtures to the egg mixture in small batches, blending well after each flour addition
- Mix in the dates and nuts
- Scrape batter into baking dish and bake for about 15-18 min.
- Enjoy tasty snack
